
Ingredients
2 blocks firm tofu
1 medium carrot
2 tomatoes
¾ cup spinach
4 cloves garlic (or less)
Avocado oil for frying (or other oil with a high smoke point)
½ tsp powdered turmeric
¼ tsp black pepper
1 tsp smoked paprika
½ tsp taco seasoning (optional)
½ tsp black salt (optional, for the egg-y flavour)
More salt to taste (optional)
Method
Dice all ingredients except for spinach and spices.
Sauté the carrot in a pan on medium heat, then add the tofu and sauté for about 10 minutes, then adding in the spices. Add in the tomatoes and then the spinach. Sauté for 5 more minutes and serve. Add in salt and pepper as desired.
